Sweet, aromatic, and fruity when ripe, with subtle pear, cantaloupe, and mango notes

Firm and astringent when unripe; jelly-like, malleable, and dense once fully ripe; thick edible skin

Notes

Native to China; historically called "Big Persimmon" or "Big Grindstone". Introduced to the US in 1905 by agricultural explorer Frank Meyer. Fragile/easily bruised, which is why it's rarely seen commercially. Disease-resistant, easy to grow.
